Since I have a gluten free family (husband has Celiac) I've tried dozens of gluten free recipes for banana bread over the years, but sadly most are a bit dry. Then I saw this recipe on Mimimalist Baker and decided to give it a try. It's a WINNER! You can even substitute the eggs with chia seeds + water to make it Vegan.

NOTE I used 4 super ripe bananas instead of 3, omitted the cane sugar and added chopped walnuts to the top before baking.
